Makhana powder is not a substitute for flour. It is something better: a real thickener that adds nutrients while it thickens. A single tablespoon does the work of a much larger measure of corn flour, because roasted fox nut carries protein that corn flour simply does not have.
The powder is made from the same roasted kernels we sell as a snack, then stone-ground to a fine, even texture. Because it has already been roasted, it tastes of something rather than nothing - nutty, warm, faintly sweet - so it disappears into a soup instead of announcing itself.
It is light, easy to digest and genuinely useful: stir it into milk for a drink, into porridge for body, into soup for body without lumps, or use it to bind a bar or thicken a batter.
