One crop, roasted properly
ekmé Nutria is a small food company in Surat, making makhana the way it should be made and selling it with a label you can read in four seconds.
A snack made simply, from one crop
Makhana has been eaten in India for centuries: roasted, popped, and shared. What it had not been given was the same care a good snack brand would give its product: a single origin, a named oil, a seasoning worth spelling out, and laboratory reports we publish.
That was the whole idea. Take one crop that does not need rescuing, and make it so good that nobody has to think about it twice.

What we check, and who checks it
Makhana powder is tested by an independent laboratory. The certificate carries the batch number, and the latest report is published here in full.
What the report covers
Sensory and physical
Appearance, odour, texture, colour and taste are recorded, alongside a check for extraneous matter.
Chemical
Moisture, pH and titratable acidity. These decide how the powder behaves in a recipe and how long it keeps.
Microbiological
Total plate count and yeast and mould, reported in cfu per gram against the batch.
Pathogen screen
E. coli, Salmonella, Staphylococcus aureus and Enterobacteriaceae: absent or under limit.
- Independent lab
- Batch-traceable
- FSSAI licensed
- Microbiologically clear

From a pond in Bihar to a pouch in your hand
Grown in standing water
Fox nut is farmed in shallow ponds across Bihar. It is a resilient crop that asks for very little: no chemical inputs, no irrigation schedule, and a farmer who can grow it alongside a fish pond. It is one of the most land-efficient grain crops in the world.
Only the grade that makes it
Seeds arrive whole and are sorted by size, colour and condition. Undergrade, broken and discoloured seeds leave the line before roasting begins. What is left is the part worth eating.
Olive oil, slow and even
Each batch is roasted over a controlled flame in cold-pressed olive oil until the kernel puffs and the inside turns to a soft, flour-like crumb. No palm oil, no butter, no hydrogenated fat.
Salt, and a single pass
Himalayan pink salt is ground coarse and applied with the oil in one drum pass, so the seasoning clings evenly to every kernel and the last handful in the pouch is as seasoned as the first.
Checked before it is packed
The finished kernels are checked before they are packed into a resealable zipper pouch, with the batch number printed alongside the FSSAI licence.
A range, not a single product
Makhana powder is now on the shelf. The botanical line, moringa, amla and beetroot, is being finished to the same standard and released together, because a range should feel like one idea, not a list of acquisitions.
We are also opening the line for private label: your pouch, your artwork, your label, packed in Surat, with laboratory testing on request.
